carrot cake
ingredients
- 3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1½ teaspoons cinnamon
- ¾ teaspoon ginger powder
- ½ teaspoon nutmeg
- 4 eggs
- 1 cup brown sugar
- 1 cup sugar
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 carrots grated
- ½ cup coconut flakes
instructions
- mix dry ingredients, stir in wet ingredients
- add carrots and nuts
- pour into 3 - 8” round, greased cake pans
- bake 350°f (180°c) for 35-40 minutes
