ingredients
- 6 ounces udon noodles
- 1½ tablespoons tamarind purée
- 2 tablespoons sugar
- 1 tablespoon honey
- 1½ tablespoons oyster sauce
- 2 tablespoons fish sauce
- 6 ounces chicken breast
- ½ onion, diced
- 2 cloves garlic
- 2 eggs
- 2 cups mixed vegetables
- ½ cup peanuts
- lemon juice
instructions
- boil noodles
- sauce: mix tamarind purée, sugar, honey, oyster sauce, and fish sauce, set aside
- thinly slice and cook chicken with onions
- add garlic and mixed vegetables
- in the same pan, to the side, scramble two eggs
- toss chicken, vegetables and eggs with noodles, then add sauce
- add peanuts and lemon juice to taste
- mixed vegetables: broccoli, carrots, mushrooms, zucchini, spinach
