- slices bacon
- can (14 oz) pinto beans
- onion, diced
- cups rice flour
- salt
instructions
- finely chop or grind bacon
- pan fry with onions
- add beans (without liquid) and purée
- stir over low flame until the beans are stiff
- next, mix rice flour, water, and salt until it becomes a soft dough
- form a ball, flatten, add bean filling
- fold the sides around the filling and smoosh into a pancake
- fry in oil
- serve with salsa and pickled cabbage slaw
makes 10 - 12 pupusas
