choux pastry
ingredients
- cup milk
- cup water
- ounces butter
- cup flour
- eggs
- teaspoons sugar
- pinch salt
instructions
- preheat oven to 425°f (218°c)
- on the stovetop, bring to a boil milk, water, butter, sugar and salt
- remove from heat and slowly stir in flour
- knead over warm stovetop
- remove from heat again, and add eggs one at a time, kneading constantly
- spoon or pipe on to a buttered baking sheet
- bake for 10 minutes
- turn temperature down to 385°f (196°c) bake 10-12 minutes more with oven door open
