ecuadorian fish soup (viche de pescado)
ingredients
- green plantains
- cup natural peanut butter
- red onion, minced
- teaspoon salt
- teaspoon pepper
- carrot
- cup green cabbage, shredded
- pound tilapia
instructions
- grate green plaintains with small side of box grater
- grate onion and garlic
- mix grated plaintains with onion and garlic, 1/2 cup of peanut butter and salt and pepper
- drop by the spoonful into 6 cups boiling water
- add chopped carrot and cabbage, and other vegetables such as sweet potato or green beans
- add fish and 1/2 cup of peanut butter
- salt and pepper to taste
- serve with hot sauce and lemon juice
