green plantain empanada
ingredients
- green plantains
- cheese
- vegetable oil
instructions
- peel plantains
- cut one plantain into 1 inch chunks
- boil in salted water until soft and let cool
- grate raw and cooked plantain together using small side of box grater
- form soft dough, add warm water to make pliable
- roll out between to sheets of plastic to 1/4 inch thickness
- cut into 3 inch circles
- fill with cheese, fold over and pinch edges
- fry in vegetable oil until golden
