potsticker dumplings
ingredients
- cups flour
- teaspoon salt
- cup hot water, just boiled
- cup ice water
- ounces ground pork
- teaspoon soy sauce
- teaspoon cornstarch
- teaspoon rice wine
- teaspoon sesame oil
- cup mushrooms, minced
- teaspoon ginger, grated
instructions
- mix flour and salt with hot water until the dough is shaggy
- add ice water and knead for 5 minutes
- let dough rest for 20 minutes
- prepare filling
- roll out dough
- fill and fold and pleat potstickers
- brown potstickers in frying pan with oil
- add 1/4 cup of water and cover to steam
- crisp again with a little oil
makes 40 dumplings
